The South Beach Diet has gone from a mid-nineties fad diet to one of the most well-known and popular diet plans. A Miami Beach cardiologist, Dr. Arthur Agatson, pioneered this diet plan and published a book called The South Beach Diet. Though it's called a low carb diet, the South Beach Diet focuses more on healthy sources of carbs and fats, rather than complete elimination of carbs. Many consider the South Beach Diet to be superior to, and healthier than, the Atkins Diet.

The South Beach Diet makes use of the idea that carbs are the easiest source of the body's energy. In an environment absent of simple and easy energy sources, the body begins to burn stored fat. So the South Beach Diet eliminates simple carbs and allows only complex, low glycemic index carbs. Variations on this diet plan have been used to help combat obesity and Type II diabeties in children.

How does the South Beach Diet work?

The South Beach Diet is introduced in phases. First, most carbs are banned. Later, complex and low glycemic index carbs are introduced to the diet. Gradually, a full range of healthy and low-GI foods are introduced with the goal of maintaining a healthy weight and diet for life. Like many diet plans, the South Beach Diet is more of a lifestyle makeover than a short-term eating plan.
